Spinach tofu wrap

My lunch today was the quickest made lunch I’ve had all year. I threw my cut up tofu (the basil one from Waitrose) into the toaster oven for about 10 minutes and added it to a whole wheat wrap with simple ingredients. The result was delicious and very filling!


The photo, I’m sorry to say, is not terribly appetising as I only realised to snap a picture after I almost finished my second one so a few bites are taken.

My “recipe”:

1/4 block of tofu, cut up and baked in oven.
Spinach to taste
Spicy hummus
Whole wheat tortilla wrap
Cucumber, 1.5 inches in length, cut into strips.
1 slice of vegan cheese

My method:

Bake the tofu. I honestly don’t know what temperature, I just eye ball it. Spread the hummus on the wrap, add spinach to wrap, add half a slice of cheese per wrap, add cucumber, and add tofu. Wrap. Enjoy.

I’m sure this would work with many other fillings. The hummus was particularly my favourite as it adds a nice dressing to the wrap without being unhealthy.


Weatherspoons Option

The man and I ran out of our burrito for the week ( no sexual innuendos, our kidney bean burritos). So yesterday we went out to a JD Weatherspoons (who now have more vegan options, yay!).

It was lucky for me because it was Curry Club night! Why is it lucky? Because there is a delicious sweet potato, spinach and chick pea Curry!


Here it is! This also came with poppadums, an onion bahji, wild rice, and a veggie samosa. As my research tells me, the bahji contains egg, so avoid that (which you can do by not upgrading the size and asking for extra poppadums instead of naan).

Vio-life cheese conclusion

Remember the cheese I bought from Waitrose? Well I finally tested out that bad boy! And bad was far from what it tasted like. It definitely tasted like real cheese.

“Regular” cheeses always leave that strange after taste in my mouth… This one, not at all! It has the texture of Swiss cheese but tastes more like mozzarella. Delicious! Definitely recommended!

Slow Cooker Kidney Bean Burritos

Looky! I finally took pictures of our dinner. Vegan bean burritos! Delicious and spicy!


Our ingredients:
2 cans of kidney beans
1 can of diced tomatoes
About 1 cup of rice (we used white as that’s all we’ve had)
1 can of corn
1 cup of vegetable broth
1/4 cup of salsa
2 tablespoons of taco seasoning
Chili powder to taste (optional, for extra kick)
Canned jalapeños (to taste and very optional)
Whole wheat pita/burrito wraps


Add all of your ingredients (minus the wraps) to your Slow Cooker and cook on low for 6 hours.


We added lettuce/spinach to our wraps before putting on the stuffing. Feel free to add avocado, sauces, whatever else you wish!

As an added bonus, we had pumpkin and oat crackers with guacamole to dip! Delicious!

Vegan/Plant-based Shopping

I am probably irrationally excited about this, but I’ve finally found dairy free yogurt and cheese! Yay Alpro yogurts (ps. they also make chocolate pudding), vio life cheese, and pumpkin seed crackers! All from Waitrose (UK).


I’ve tried the yogurt before and it tastes just like regular yogurt. I have yet to try the cheese. Will report back when I find a use for it!

Yesterday the man and I made black-bean burritos (only we used kidney beans) in our newly purchased slow cooker. Meat free, dairy free, and absolutely delicious! I will take pictures and upload them tonight!

Another achievement this week: I have gone to the gym today, used the treadmill for about 30 minutes (20 running, 10 walking). After that I used the rowing machine for about 10 minutes. Feeling a little sore today, but will likely be feeling very sore tomorrow.

This weekend was a bit better than previous in terms of cheating on my diet. Only a few digressions. I also ran out of milk this weekend and used a tiny bit of my boyfriends cows milk. I must say, the taste was not good. After so long drinking soy and almond milk, I do not like the taste of cows milk.

160 lbs

This week I have made it out to the gym! Only for about a half hour, but I am proud of that first step.

On a slightly sadder note, the scale at the gym told me that I weigh 160lbs. This was disappointing as I had reached my goal weight in September (145 lbs). So, looks like I have 15lbs to lose.

This week I have not been terribly great with my food choices. I find myself coming home and just gorging on a massive amount of food. I’ve been eating a lot of carbs (bread in particular). My justification is that it doesn’t have animal products, so it must be good, right?

The weekends are still a mess. The boy and I eat out (this week it was a chili dog. Always so much regret after that) and buy candy. So there’s where all of my calories are coming from. I need to try harder. On Friday I also went to a coworkers birthday at a restaurant and there was burger involved. Again, so much regret.

We only have three weeks until we go to Paris, which will probably involve a lot of cheese. No so much pastries as the boy has a peanut allergy so we stay away from pastries. But, three weeks of healthy eating and going to the gym. I can do this right? I likely will not lose 15lbs in that time. I don’t think that would be to healthy, but a bit of weight lose and a bit of tone.

Yesterday we bought a slow cooker. So there will be a lot of temptations of meat and other non plant based cooking. So the boy will have his meals taken care of, which means that I get all the tofu!  Huh, never thought I’d be excited for tofu…


And above is a picture I actually remembered to take! Whole wheat pasta, spinach, celery, and grape tomatoes for my lunch. Added a bit of marmite to get my B12 and a tad bit of vinegar so it wouldn’t be so thick with marmite. It was surprisingly delicious! But, there are the carbs again.

Alright, three weeks to get better! Let’s do this!


Well another week has come and gone.

This week was not too bad, in my opinion. Although on Saturday and Sunday I indulged a little too much. Cookies, meat, dairy, candy, etc. Everything bad that I could have consumed, I did. At least it is no longer every day of the week, right?

I had taken some pictures to track my progress and hopefully keep me on track. So here they are:

Some of you may say “what’s the big deal? She looks fine!”. While this probably is not my largest weight, it’s getting there. My goals are to tone my stomach, legs, and arms. Arms are not pictured here.

In terms of diet, I have made some terrific discoveries! The main being tofu! I’m not sure if I’ve already made a post about this, but I’m doing it now. I’ve struggled with finding tofu in the UK. The stores that surround my home are all express stores and none of them have tofu. But I have finally found one! It has both flavored tofu and plain tofu! And there are also vegan hot dogs…but I’m not too excited to try those just yet.

Also, marmite! Apparently it’s loaded with B12 vitamins which are pretty much a necessity for a vegan or plant based diet. I’m not a fan of eating it the way the British do (on toast…gross!). It’s got a very salty, harsh flavor. So too much of it is kind of gross. But I’ve been making roast potatoes with it as we as adding it to my veggies when I stir fry them rather than other sauces (such as soy sauce).

I’ve noticed recently that my hair loss is increasing. But I’m unsure of whether that has to do with my diet or with the medication I take for my arthritis. Either way, I thought it would be a good idea to increase my B12 intake. As well, I’ve been including spinach in my diet to keep my iron at decent levels. Hopefully I’ll see some positives from these additions.

In terms of exercise, I’ve started doing yoga in the mornings before I go to work. And today, Monday, I did a 20 minute cardio workout. So, I’m slowly getting back into it!

Sadly, I’m still forgetting to take pictures of my food. I really need to take a minute to breathe and take a picture before I put it into my face. I will try harder at this! See you next time! Hopefully with more pictures!
