A yummy lunch time dish!
Cook your quinoa. Add a handful of kale (or spinach or both), add cooked kidney beans, green peas, avocado, pepper and salt, and minced garlic. Mix it all up! Top with sriracha sauce for a bit of a kick!
1 cup of quinoa (cook this and it shoumd double in size)
1 can of green peas
1/2 can of kidney beans
1 handful of kale (or spinach)
Minced garlic cloves (optional)
Salt and pepper to taste
Sriracha to taste
